L-Theanine Calming Herb Turkey Lettuce Wraps with Roasted Sweet Potato Wedges

Ingredients:

  • 180 g lean ground turkey (93/7 or leaner)
  • 6 large butter lettuce leaves (washed, patted completely dry)
  • 150 g sweet potato (cut into 1.5 cm wedges)
  • 40 g red bell pepper (finely diced)
  • 20 g shallot (minced)
  • 10 ml avocado oil
  • 5 ml toasted sesame oil
  • 15 ml coconut aminos
  • 3 g fresh ginger (microplaned)
  • 2 g dried turmeric
  • Fresh Thai basil leaves for garnish
  • Lime wedge for finishing

Preparation:

  1. Preheat oven to 200°C (400°F). Toss sweet potato wedges in avocado oil and a pinch of sea salt. Spread on a parchment-lined tray and roast for 22–25 minutes until edges are caramelized and interiors are fork-tender.
  2. While wedges roast, heat sesame oil in a nonstick skillet over medium heat. Sauté shallot and ginger for 90 seconds until fragrant and translucent.
  3. Add ground turkey to the skillet. Break apart with a wooden spoon and cook for 6–8 minutes until no pink remains and the meat is lightly golden. Add coconut aminos, turmeric, and diced bell pepper. Stir to combine thoroughly and cook for 2 additional minutes.
  4. Spoon the turkey mixture evenly into butter lettuce leaves. Garnish generously with fresh Thai basil and a squeeze of lime. Serve immediately alongside the roasted sweet potato wedges.
